Directions:

A rib must cut in a way So that a piece of rib’s bone attached to the meat just like a handhold.   • Onion: 2 pieces

Directions:

Chopped the onions and roast them in oil; then add the turmeric. Now Peas and beans plus some water must add to the Frying pan, and we will wait until peas and beans become cooked.AddOatmeal, Shin, salt, and pepper to the porridge and wait until the mixture becomes very thick. Now it’s time to serve and enjoy the food.

Shole Mashhadi
Shole Mashhadi (congee) Recipe

Ingredients:
  • Calf Shanks: 250 grams
  • Stewed meat: 300 grams
  • Peas: a half of a cupful
  • Pinto beans: a half of a cupful
  • Mung beans: a half of a cupful
  • Wheatgrass: one and half of a cupful
  • Half Rice: a half of a cupful
  • Onion: tree chopped pieces
  • Salt/Pepper/ Cinnamon/Turmeric: As much as needed
Directions:

Put the meat and one of the chopped onions along with a little turmeric to be cooked through. Wait for them to be cooked thoroughly, then separatebonesfrom Meats. After that, crush the meats and left them besides. Put Peas and beans on the flame to be prepared. Hence they were half cooked, add Mung beans, and wait for them to be cooked entirely. Pour the rice & wheat groats in some boiled water and wait until the rice becomes softer. Now incorporate a fried onion, meat, wheat groats, and beans and cooked rice altogether. Add the desired amount of pepper and salt and put the boiler on low heat.  Now you must stir it, not to bake the food. This kind of pottage will alsogarnishby some pieces of stewed meat. The postage will also serve with meatballs.

For preparing meatballs, you should add Turmeric to the fried onion. Here, the chopped lamb will roast in the onion. Add some tomato sauce and roast the mix in the oil. Now add some water as much as the meat could absorb that. Now you can garnish your pottage with these meatballs. By the way, some may add split peas in the meatballs too.

Pour some oil in the bottom of the pot and arrange them in the bottom regularly. Above them, spray some sugar and turmeric and strew the rice at this moment. Place the dried apricot among the rice and wait for the rice to steam. To aromatize the meal, you may rub some melted butter on the rice. This food worth it to try!

  • Almond slivers: half a cup
  • Salt, pepper, saffron and other spices: as much as you need

Put the onion in a pan and fry it together with the turmeric. Add the stewing meat and roast it in the oil. Add a proper amount of salt, pepper, and other spice to make it tasty. After cooking for a few minutes, then add a little water to bake the meat as well as you can. To have softer almond slivers, fill another pot with water and pour the almond silvers in it, then place it on a low fire. You can add some saffron to the almonds for coloring them. Spread the baked meats in another frying pan, add the almond slivers, and left it to boil for a while. When the water level is appropriate, then break the eggs in the frying pan; in this step, Water must be a little more than your stew’s level. Some may use just yolk and they ignore the white egg. When the eggs become thicker, the stew is ready to serve.

Ingredients:
  • Minced meat: 300 grams
  • Cotyledon: 1 cup
  • Potato: 2 large ones
  • Onion: 1 medium one
  • Tomato puree: 1 tablespoon
  • Fresh or dried tomato: 2 medium ones
  • Tarragon and a few dried fenugreek (and savory, if you like): 2 tablespoons
  • Dried limes: 2 pieces
  • Salt, turmeric, pepper, and cumin: as much as you need
Directions:

Steam the meat together with cotyledon, onion, and turmeric. When the meat is baked, dice the potato in big slices and add it into the pot along with salt, pepper, dried vegetable, tomato (or dried tomato), cumin, and dried lime. There is a tip here! Dig a hole on dried limes, so that the sourness will help to enhance the flavor. Wait for the soup to boil and becomes ready. Some may use chicken instead of meat. Have a good day!
