khelal polo
Slivers and rice (khelal polo) Recipe

Ingredients:
  • Chicken: 4 pieces
  • Orange slices: half a cup
  • Rice: 4 cups
  • Onion: a medium one
  • Sugar: half a cup
  • Salt, turmeric, pepper: as much as you need
Directions:

Prepare your fried onion seasoned with turmeric. Roast the chicken pieces in the same pan and add a little amount of water to bake the chicken as well as you can.  Add the desired salt and pepper and measure the water content; there must be some water in the pan. Orange slices must soak in the water, and after a while, the water must be drained. Here add some freshwater and heat the orange slices, then change the water again and do the same thing for one more time. This step will help you to overcome the bitterness of oranges. Now add a half glass of water together with sugar and saffron. This process will change the flavor to a suit and tasty one. Steam a drained of pilaf rice and pit the orange slices on the top. You have to serve the chicken beside the rice. That’s it! You will enjoy a different meal!

Directions:

Prepare the fried onion and season with turmeric. Roast the vegetable in the same pot and at the end, pour the ground walnuts and roast for an extra minute. Add salt, pepper, and pomegranate sauce and boil it on a low heat until it becomes tasty. Peel the eggplants and cut a longitudinal line in the middle of eggplants, so that you could put the stuff in it. The gap should not tear from the other side. Roast the eggplants in oil until they turn into golden brown. Arrange them in a platter (Glassones are better for serving if they will not break, while you bake the final mix in the over) and try to face the gap to the top.   • Dill:  1 cupful fresh vegetable or about 50 grams of dried one
